Happy National Brownie Day
To celebrate National Brownie Day (yes, that’s a thing), we’ve put together a really simple brownie recipe for you to follow.
The ingredients make enough for about 4 people, but you can easily double up the ingredients and add 5-10 minutes to the baking time.
Ingredients
90g butter
100g dark chocolate
30g milk chocolate
30g white chocolate
2 medium eggs
140g golden caster sugar
40g plain flour
20g cocoa powder
Method
Step 1
Get all your ingredients measured out and organised, and put away unused ingredients so you have a clean workspace.
Step 2
Melt 100g dark chocolate (either in short microwave bursts or using the bain-marie method).
Step 3
Add the butter into the melted dark chocolate - there should be enough heat in the chocolate to melt the butter, but if not, just put the mixture in the microwave for a few seconds. Once they are melted together, set aside to cool.
Step 4
Melt 30g milk chocolate and 30g white chocolate together (either in short microwave bursts or using the bain-marie method)
Step 5
Sift 20g cocoa powder and 40g plain flour.
Step 6
Whisk 2 medium eggs and 140g golden caster sugar until they go pale and double in volume (should take about 4-5 minutes).
Step 7
Gently mix in the cooled dark chocolate and butter mix and the milk and white chocolate (it has to be cool or it will start to cook the eggs and you’ll have scrambled chocolate eggs!). Be very gentle with the mixing, so you don’t knock the air out of the eggs.
Step 8
Resift the flour and cocoa powder, and gently fold them into the wet ingredients.
Step 9
Pour the mixture into a buttered baking tin and spread to the corners of the tin.
Step 10
Bake at 160oC for 15 minutes. Keep an eye on it though, depending on how gooey you like your brownie to be.
Step 11
Serve your brownie hot with whatever side you like - ice cream and skooshy cream is pretty great!
